Pigs born and raised at Martinelli's Farm in North Scituate, RI. Processed in a USDA facility (Westerly, RI) and copacked at New England Charcuterie (Boston, MA). Doesn't get more local than this!
"Old world-style" = cured with celery salt instead of chemical nitrates. Still has protective mold casing on it. Casing can either be consumed or easily removed when slicing.
